Barossa Chooks

Barossa Farm Produce was established in 1997 by Saskia Beer and Greg Price. From the outset they were commited to a sustainable farming project that would produce the finest quality product. The Barossa Chook has become an icon of quality produce in Australia.

These fanstastic chooks deserve their reputation as the best chicken in Australia. They are free range, chemical and hormone free and have a tailor made diet based on corn. The Cobb/Ross birds have access to pasture through the day, but have access to eco shelters which offer both protection from extreme temperature conditions and from predators. They are allowed to forage for a part otheir diet and their development is slow and natural.

They have a significantly longer development cycle of 10 -12 weeks rather than 42-49 days with many commercially produced chickens. The extra time allows for a muscle development that translates into darker and tastier leg and thigh meat. The noticably more “meaty” chicken has a denser, softer grain and a silken finish.

Unlike many other chickens, the Barossa chooks are fed a completely vegetarian diet, free of meat meal, blood meal and fish meal. All protein in the diet is supplied through wheat, lupin, oats and other grain.

The result – a fantastic bird that stands up to all preparations and is chicken “like it used to be”

The beef  spends 28 days dry aging in our specially designed dry age room at Victor Churchill before being broken down by our butchers.

The key effects of dry aging are the concentration of flavour and the breaking down of the connective tissue in the muscles resulting in more tender meat.

The butchers begin by removing the outer crust of the dry aged beef.

This reveals the moist interior of the beef ready for trimming and preparation for sale.

This OP Rib receives final trimming by our butchers and the result, some wonderful Rib Eye on the bone and Scotch Fillet.
