Butcher flies up-market

I remember when the flashest thing about a butcher shop was the blue-and-white apron on the butcher.
Then, along came Terry Wright and turned his butcher shop into a deli/butcher hybrid and, much later, Colin Holt created a butcher shop (Hudson’s) that looked more like a restaurant when you swept down the wide stairs in Surry Hills.
But the Puharich family – father Vic and son Anthony – of Vic’s Premium Quality Meats have upped the ante with Victor Churchill (132 Queen Street Woollahra, Ph 9363 1053), the first butcher ever designed by design maestro Michael McCann of Dreamtime Designs, whose dramatic restaurant interiors you’d be familiar with (Flying Fish, Whitewater, Pony etc).
